Is there a way to make the appointment ID or better yet the Woocommerce order ID the google event title?

This is not supported, currently. Available codes for the GC event title are {service_name}, {category_name}, {staff_name}, {client_names} and {client_phones}. You can leave your suggestion for plugin's improvement here and if it becomes popular among other users, our team will consider it for future releases.
