You can hide some fields while adding the form on the page: https://support.booking-wp-plugin.com/hc/en-us/articles/212800185 So if you want to hide first step, you will need to choose the default values for Category, Service and Employee fields and hide them.
As for Payment step, please, disable all payment options in Settings > Payments.
