We use the Group Bookings add-on, and we want to include some sort of unique booking reference in the email notification that is sent to the client. 

If you don't use Group Bookings, you could probably use the {booking_number} tag, but in a Group Bookings context, this is pretty meaningless:

The Booking Number seems to uniquely identify an appointment, not a booking. So when we have 3 different groups of customers turning up for the same appointment (which is the way our group sessions work), they all get the same Booking Number, which is no use at all. 

The booking transaction should be an event in its own right - after all the database seems to store a separate payment_id for each individual booking.

This is a deficiency of the Group Booking add-on - it is surely a basic requirement to be able to uniquely identify a customer booking.
