Question 1:

How can i limit the time a service is available to be booked when using the same staff member?

Example -  

Private training session - Available Monday 9am-10am via staff member Sammy
Group training session - Available Monday 10am-4pm via staff member Sammy

How can I specify when this service is available? e.g. Private session only can be booked for 1 hour at Mon 9am-10am.  I can see via the staff member i can be edit their working hours and days off, however how do i do this for a service? e.g. configure the service so it is only available at a certain day/time even though the staff member is available at other times.

Question 2:

How can i make a service when booked ensure that 2 staff members are assigned to it?

Example -  

Zoom training session - when booked I want 2 staff members to take the session (Sammy and Anthony). 

At present i have to create a new staff member called Sammy and Anthony and assign that to the service.  This isn't ideal for the sessions to go into the staff calendars.
